It always makes you feel virtuous if you can make something which tastes as good, if not better, than the supermarket but you know it does not have the same preservatives and additives. Check out this yummy dip!
Assuming serves 10
1 garlic clove
100g sun dried Tomatoes (drained)
250g red capsicum
120g unsalted cashews
10g olive oil
20g white vinegar
1. Place all ingredients in food processor or thermomix and blend until a rough but evenly chopped consistency is achieved.
Serve fresh with carrot sticks, cucumber sticks or crackers. Remember, each of these adds calories.
