Gluten Free Cran-Nana Bread

I made this in 10 minutes (well apart from the cooking time) after a hectic morning involving the alarm at 5.15am, taking my 11 year old to a 6am swim squad, swimming 1500m myself, dropping the 11 year old to school, returning home to retrieve¬†his lost hoodie, returning the hoodie back to school – well you know don’t you Mums, life is just hectic! I needed a yummy but healthy treat – here you go, treat yourself!

INGREDIENTS

3 overripe bananas mashed well
1/2 cup cranberries (or sultanas)
1/2 cup coconut flour
2 tbsp almond butter
1/4 cup sunflower seeds
1 tsp cinnamon
1 tsp nutmeg
1 tbsp lemon juice
1/2 tsp bicarb of soda
5 eggs, lightly whisked
pinch of salt

METHOD

Preheat oven to 180 degrees
Grease and line a loaf tin
Place bananas, cranberries, spices, almond butter, eggs and flour in a large bowl
Dissolve bicarb of soda in the lemon juice then add to mixture.
Mix with a wooden spoon
pour mixture into prepared tin and sprinkle the sunflower seeds on top
Bake for 45 mins
